Fukamushi means deep-steamed, and that is the whole difference: the leaves are steamed for roughly two to three times as long as a standard sencha. The longer steam breaks down the leaf's cell walls and shatters it into smaller particles, so more of the leaf itself ends up suspended in your cup. That is why a fukamushi brews cloudy and dark green, and why it tastes fuller, sweeter and rounder than a standard sencha, with much of the sharp astringency smoothed away. Because the particles are so fine it also infuses fast, so a short steep is enough and over-steeping will make it heavy. It is the style to reach for if regular sencha has ever tasted too sharp to you.

Les agriculteurs de Satoen que nous avons rencontrés nous ont fièrement fait visiter leurs installations. La famille produit du thé vert depuis 1948 et ce qui nous a le plus frappés, c'est le grand soin qu'ils apportent aux détails à chaque étape du processus de production du thé.
Les salles où ils finalisent la production de leur thé vert sont soumises à des contrôles et à une désinfection rigoureux afin d'éviter toute contamination. Lors du tri initial du thé, ils utilisent une machine qui analyse la couleur des feuilles et élimine celles ou tiges ne correspondant pas à la teinte verte parfaite recherchée.

Le Sencha Shizuoka Yamaga no Sato est produit à Shizuoka , la plus grande région productrice de thé du Japon. Le climat de Shizuoka étant assez froid pour la culture du thé, les agriculteurs doivent travailler sans relâche pour maintenir les plants robustes et sains durant l'hiver.
Cela implique l'utilisation de nombreuses techniques ingénieuses, comme la mise en place de paille au pied des théiers pour isoler les racines de la chaleur et de l'humidité, ainsi que l'utilisation de ventilateurs pour maintenir les théiers au-dessus de zéro. En protégeant les théiers du gel, les producteurs de Satoen parviennent à produire chaque année un thé vert délicieux !
Cultivar : Yabukita, Asatsuyuvariété de thé
Les cultivars utilisés pour produire ce sencha shizuoka sont le yabukita et l' asatsuyu .
Yabukita: Le cultivar yabukita est la variété de théier la plus populaire au Japon car elle supporte les hivers rigoureux Shizuoka . Ce thé offre une agréable saveur végétale, ainsi qu'une légère note umami. Le cultivar yabukita constitue la base de la structure gustative, tandis que l' Asatsuyu en adoucit le goût.
Asatsuyu: Asatsuyu quant à lui, est un cultivar plus doux et délicat, offrant une saveur sucrée. On le surnomme «gyokuro naturel » car il conserve cette agréable saveur sucrée même sans la longue période d'ombrage. C'est le thé idéal pour contrebalancer les notes légèrement herbacées du Yabukita .
Préparation et serviceJusqu'à 60 tasses
Boisson chaude : 5 g de feuilles, 150 ml d'eau à 60 °C (140 °F), 45 secondes.
Brassez-le à nouveau : Les mêmes feuilles permettent de réaliser 3 infusions. Réinfusez-les 2 fois avec de l'eau à la même température, pendant 20 secondes à chaque fois ; chaque infusion aura un goût légèrement différent.

Wonderful and sweet sencha. I often describe it as humming. It provides me with the same elation I get from coffee complex enough for multiple infusion simple enough to understand for a beginner. My favorite tea by far I even prefer of it over some Gyokuro.
I had only prepared bancha before this, and my first brew was without a thermometer. I ended up running it 20 seconds longer and perhaps 20 degrees c hotter than instructed, and the results were as poor as you might expect. Later attempts revealed a super delicate airy, fruity character with little bitterness. (Very much unlike the oily viscosity and boldness of the bancha.) So, if you have this tea, take the time to dial in the variables. You can reach a flavor as nice as it smells from the bag.
My husband had me ordered this for him and he’s been drinking it every day for a couple of months and really likes it. He feels like it’s helped to speed up his metabolism.
Absolutely delicious but can get bitter if you are not mindful during preparation when comparing to some of the other senchas. Still and excellent choice though.
I love this green tea! This is my first experience brewing loose tea and I am enjoying making this amazing green tea and then drinking the whole tea pot. It has a wonderful aroma and the taste is just what I was looking for: a grassy, vegetal and sweet very satisfying tea. I tend to be sensitive to caffeine but I have had no issues with the light caffeine in this tea even when I drink it late afternoon. You can see from the picture that I’m almost finished my first bag and I already have another full bag waiting to open and enjoy. I’m so glad I tried the Nio company tea. It’s perfect for me and I never want to be without it on hand.
This sencha never disappoints. Savory and brothy with a humming sweetness in the kyusu. Often leaves a cotton candy smellbor subtle fruit notes in the cup. My go to sencha.
This is by far my favourite sencha tea and I have tried many over the years. For me personally, this one is perfect. It has a lovely tang and tartness to it with a really subtle umami flavour. The first sip of this teas is the most wonderful experience for me each morning!
This Yamaga Sencha is magical... my favorite for sure. The beautuful dark green color is quite opaque & gets darker with each successive steep. The minerally flavor is unique & very appealing. It's quite sweet with a lovely vegetal & fruity taste & a slight umami finish. I am certain you will enjoy it.

As I savor this tea, I feel a gentle rise of energy to the top of my head, accompanied by a subtle pulse at the forehead.
The deep jade color, incredible flavor, and invigorating energy make me feel as if I am drinking a wizard's potion. Truly, this is one of the "greenest" green tea I've ever encountered.
Fruity scent on the dry leaves. Gentle umami on the first infusion. Slight fruity notes. Hits the back of the tongue first and then spreads to the sides. Second infusion gets very rich. Tastes quite fresh. I think this would make a lovely cold brew. Green gets really deep on the third infusion. All the flavors are balanced out now and the tea has a well rounded body, with a less prominent umami.
Yamaga no Sato is one of my favorites Sencha's tea.
It is gentle but full of flavor. I love the toasted walnut flavor. At the right steeping temperature, I enjoy the magic of this tea.

I was really looking forward to trying this tea, especially since it was marketed as having a good umami flavor. When I finally opened the bag I was disappointed to see that the tea was manly dust and broken leaves. The tea was mild and one dimensional, I didn’t really get a strong umami flavor. It wasn’t horrible, just not what I thought I was buying. I will probably not buy this tea again.
I am a 90 year-old Australian so I love tea - black tea. Only recently have I tried sencha But the brand? I bought locally didn’t impress me. On the other hand, this one surprised me – there is so much flavour - and although it took several sips to become accustomed to it -I must admit I’m hooked!
My favorite Nio sencha so far! Excellent depth and richness with a pronounced umami character. More layered and complex than expected, with a lingering savory sweetness that keeps you coming back for another sip. Will definitely order again!
Like Saemidori, this is a mix of Asatsuyu and Yabukita...but I like this more than Saemidori! More flavorful without being overly rich and heavy. I'd be interested in why this one is so different.
