Chez Nio Teas , chaque matcha est classé en quatre catégories : Latte, Entrée de gamme, Premium ou Supérieur. La catégorie Premium est notre sélection cérémoniale raffinée : il s’agit de feuilles de première récolte ( ichibancha ), cultivées à l’ombre pendant une longue période avant la cueillette, et dont seules les plus jeunes et les plus fines feuilles sont sélectionnées. Ce matcha offre une saveur umami très intense, une amertume très faible et une astringence minimale. Sa texture est suffisamment onctueuse pour la préparation de koicha (thé épais) et d’usucha.

Le Matcha Uji Chanoka Okumidori est classé en catégorie Premium grâce à ses qualités gustatives. Le cultivar Okumidori lui confère une texture onctueuse et une belle rondeur en bouche. Ses arômes de légumes cuits à la vapeur évoluent vers une fraîcheur herbacée, puis une sécheresse raffinée et une légère amertume de chocolat noir.

Le matcha Uji est fabriqué à partir du cultivar Okumidori et, d'après les commentaires des clients, c'est constamment notre type de matcha le plus populaire chez Nio Teas .

Okumidori est une variété de thé réputée pour sa capacité à produire des thés onctueux et corsés. Souvent mélangé à d'autres thés pour atténuer son amertume, il peut aussi se déguster pur. Bien que sa production soit plus complexe, Okumidori est très apprécié pour sa contribution à des thés comme le matcha Uji , dont la finale est totalement dépourvue d'amertume.

Mélangé en une fine couche comme l'usucha, 2 g de matcha permettent de préparer un bol.

  1. Trempez le fouet en bambou — 2 à 3 minutes avant la première utilisation, 30 à 60 secondes pour une utilisation quotidienne.
  2. Tamisez 2 g (1 cuillère à café) de matcha , soit environ 2 cuillères chashaku , dans votre bol.
  3. Chauffer l'eau à 70°C / 160°F.
  4. Ajoutez 10 ml (1 cuillère à soupe) d'eau et travaillez jusqu'à obtenir une pâte lisse sans grumeaux.
  5. Ajoutez le reste de l'eau — 80 ml / ⅓ de tasse au total.
  6. Fouettez en effectuant des mouvements rapides W pendant 15 à 30 secondes.
  7. Savourez votre matcha , puis rincez le fouet, laissez-le sécher à l'air libre et rangez-le sur son support.

En format latte :

  1. Tamisez 2 g (1 cuillère à café) de matcha , soit environ 2 cuillères chashaku , dans votre bol.
  2. Chauffer l'eau à 70°C / 160°F.
  3. Ajoutez 10 ml (1 cuillère à soupe) d'eau et travaillez jusqu'à obtenir une pâte lisse sans grumeaux.
  4. Ajoutez encore 30 ml d'eau — 40 ml au total — et fouettez en effectuant des mouvements rapides W pendant 15 à 30 secondes.
  5. Versez le matcha sur votre lait chaud ou froid préféré. Ajoutez des glaçons pour obtenir un latte au matcha glacé.

Nous nous approvisionnons en thé auprès de Takada Masahiro, un agriculteur installé à Uji , qui dirige l'entreprise familiale Chanoka . L'histoire de Chanoka remonte à 1900, lorsque l'arrière-grand-père de Masahiro créa leur premier jardin de thé à Uji . Depuis, sa famille se consacre avec passion à la culture et à la production de certains des meilleurs thés du Japon.

Il s'agit d'un matcha d' uji , au Japon, la région la plus réputée pour la production de thé vert japonais. Ce thé vert spécifique est cultivé sur la ferme de M. Chanoka à Uji . Cultivé à 400 mètres d'altitude, le matcha est cultivé à l'ombre pendant trois semaines avant la récolte afin de développer une saveur plus douce et plus riche.

Pour nous, le thé est bien plus qu'une boisson : c'est un art de vivre. Depuis des années, nous visitons des plantations de thé à travers le Japon, dégustons des thés avec les producteurs et tissons des liens directs et durables. Nous sommes convaincus que c'est la manière la plus durable de s'approvisionner en thé : moins d'intermédiaires, une meilleure traçabilité et un lien plus étroit entre le producteur et le consommateur.

Comment faire Matcha comme un pro

Discover the art of preparing the perfect bowl of matcha, from choosing the right tools to mastering the traditional whisking technique.

Prepare

Soak the bamboo whisk. First use: 2–3 minutes · Daily use: 30–60 seconds. Sift 2 g (1 tsp) of matcha, or 2 chashaku scoops, into the bowl.

Make the Paste

Heat water to 70°C / 160°F. Add 10 ml (1 tbsp) of water and combine into a smooth matcha paste with no clumps.

Whisk

Add the rest of the water, 80 ml / ⅓ cup in total. Whisk in quick W motions for 15–30 seconds.

Enjoy & Care

Enjoy your matcha. Rinse, air-dry and store the whisk on its holder.

We ship from warehouses in the US, the EU and Japan — whichever is closest to you. US and EU orders arrive in 4–12 business days; the handful of countries served from Japan take around 10. Business days count from dispatch rather than from when you order, and exclude weekends and public holidays. You'll get a tracking number by email the moment your parcel leaves the warehouse.

We only buy from fields grown without pesticides or chemicals. We ask each farmer directly how they manage their land, visit the plantation and processing facility ourselves, taste every harvest before committing, and check that the biodiversity around the fields is alive. Small family farms don't always carry paperwork — so we verify it in person instead.

Japanese green tea covers an enormous range, and choosing online isn't easy. If you've tried yours and it isn't for you, email info@nioteas.com within 30 days with your order number and a line on what you didn't enjoy. We'll send a different tea of equal or lower value, free. Nothing to post back — keep it, share it, or try brewing it cooler. Once per order.

Email info@nioteas.com within 30 days with your order number and a photo. We'll approve it, cover the return postage with a prepaid label or a reimbursement, and refund you — no restocking fee. Refunds go to your original payment method within 2 business days of the return reaching us; your bank may take another 5–20 to show it.

Unopened items in their original packaging can be returned within 30 days. Tea is sealed for hygiene, so opened packs can't come back — but the swap above covers exactly that situation. Return postage is yours unless the item arrived damaged, defective or incorrect.

Orders to the US and EU ship domestically from our local warehouse, so there's no customs charge and no duty. A small number of destinations are served from our Japan warehouse, where your own customs authority may apply import duty, VAT or a carrier handling fee on delivery. Those are set by your country, not by us. Ask before you order and we'll help you check.

This is far grander a tea than most “on the market” matcha teas one can acquire at the local shops. I typically will drink a cooking grade matcha, but never again! I love that this tea is affordable and has an excellent balance of flavor (mildly pleasant bitterness and grassy notes) and allows for one to have a less jittery caffeine boost.

This matcha from the renowned Uji region pleasantly surprised me. Despite its ceremonial grade, I wanted to venture into a daring exploration and decided to marry it with fresh oat milk. The result? A taste explosion that really exceeded all expectations! The encounter between the vibrant green of matcha, from the okumidori cultivar, and the creamy smoothness of the vegetable milk generated a unique taste experience. Ok so I really wanted to love this matcha because I bought so much of it at once. But it was very light/flowery and although the color is beautiful it wasn’t earthy enough for me and it didn’t have enough caffeine in it for my liking. Over all it is high quality so I gave it 4 stars

Chanoka Okumidori has a more intense bitterness to it. The grassyness is balanced with a nice yet slight sweetness. The umami note is on the fainter side. With it's ticker feeling/texture in the mouth and medium dryness Chanoka Okumidori gives one an overall round Matcha experience. Especially good for beginners, who still do not know what to look for in a Matcha. Not so much for experienced Matcha drinkers, as Nio can shine with more impressive ones.
